Project Party Weekend and Watermelon “Cake”

 My daughter that just LOVES watermelon was very pleased with her birthday “cake”.

Last week you may remember that I posted about Heather from A Cupcake Love Affair’s Watermelon Fruit-Cake that she linked up the week before.  Well, I DID get to make one for my daughter’s birthday and I think it turned out great!  I was surprised that it was so easy to make.   I just cut the watermelon off at both ends and cut the rind off with a knife.

Then we cut up other kinds of fruit to put around the cake.  We used toothpicks to secure some of the kiwi and all of the blueberries.  The strawberries were just left whole!

 

 It was definitely the hit of the party and SO HEALTHY too!!! 

What do you think about a “fruit-cake”?  I was wondering what other types of fruits could accomplish the same thing… cantaloupe?  I think watermelon is just perfect though!

  8. It turned out great. I might do this for my son’s 2nd birthday because it’s in hot hot July! ooo….cantaloupe, like a “bomb” cake.

    • Oh… a bomb cake would be fun! Everyone loved this “cake”… I think it’s a really great idea. I am so glad that Heather shared it!

  12. That’s so funny, Rachel. I just made a fruit “cake” for my daughter’s 2nd birthday this weekend and I didn’t even see this!! Here I thought I was so original. In fact, I posted a pic in our class asking for help making it look better! ;-) So jealous of your photo abilities!! Happy birthday to your sweet daughter.
