Chorizo Wrapped Asparagus Bundles

 I am one of those lucky moms whose kids actually eat their veggies… well most of them.  I can’t complain because my kids are really not that picky. Asparagus is usually a hit and miss with my girls though.  If I hide it well enough they will eat it.  I, on the other hand, LOVE asparagus.  I was passing by the deli section at the grocery store and noticed the thinly sliced chorizo they had and this idea for Chorizo Wrapped Asparagus Bundles popped in my head.

It was a perfect flavor combo and my kids LOVED it.  I will be adding this to our round of healthy meals from now on!

 The ingredients are really simple.  Chorizo is a sausage from Spain.  They also make a version in Mexico, but this is not it!  Make sure that you get the Spanish version… it is less spicy and more flavorful.  I found this one at Walmart and it is sliced super thin which is perfect for this recipe.   What does Chorizo taste like?  I think it tastes a little like pepperoni only sweeter, less spicy and more smokey.  It’s really hard to explain, but most likely if you like pepperoni you will love Chorizo.  This particular one is made with imported paprika and white wine… It is wonderful!  Click on the word Chorizo to find out more.  The other ingredient that I used that I absolutely love is fresh Parmesan.  I know it sounds gross to most people, but I like to eat a chunk of it straight sometimes! :P

 I first roasted the asparagus with some olive oil and garlic sea salt.  Then I wrapped 1 Chorizo around 3 stalks and repeated until they were all wrapped.  Then I sprinkled some Parmesan on top.  WOW!  This was a hit!!!

 You seriously NEED to try these!!!   They are fancy enough to serve at a nice meal and tasty enough that your kids will scarf them down.  The best of both worlds! :)  

Chorizo Wrapped Asparagus Bundles

Ingredients

  • 1 package of dry Chorizo thinly sliced (Daniele brand can be found at Walmart deli section)
  • 1 bundle of Asparagus
  • Garlic Sea Salt (I used McCormick brand grinder)
  • olive oil to drizzle or spray
  • 3 Tbsp. Fresh grated Parmesan Cheese

Instructions

  • Heat oven to 400. Cut Asparagus stalks about halfway down to avoid the hard ends of the stalks. Place on cookie sheet and drizzle or spray with Olive Oil. Sprinkle with Garlic Sea Salt. Bake on 400 for 15 minutes. Take out of oven and let cool for a few minutes (enough to where you can handle them without being burned) and then wrap 1 Chorizo slice around 3 stalks of Asparagus and repeat until all Asparagus stalks are wrapped. To serve place on plate and sprinkle with Parmesan. Enjoy!
